Mandoline

No, not the instrument.  I have used this tool and it is sharp, VERY sharp. I have lost flesh because I didn’t use it properly. If you have one or plan on getting one, please use according to directions.  Don’t be a hero in a hurry like me!  Your fingertips will thank you!  This makes perfect even slices on just about anything you need.  It is a bit of a pain to store, but worth it for big jobs. 

I love tin-foil or hobo dinners.  Don’t know why, but I do.  Here is my version, complete with perfectly sliced potatoes that will NOT take 2 hours to cook!

Hobo Dinner

(serves 4)

  • Heavy Duty tin foil in 4 large rectangles
  • 1 lb ground beef (lean, please)
  • 4 yukon gold potatoes
  • 1 pkt dry onion soup mix
  • 1-2 zucchini
  • 1 onion
  • carrots (baby or daddy)
  • other veggies you have hanging out in your fridge (not lettuce, ew)
  • ketchup
  • salt and pepper

Divide beef into 4 patties and put in tin foil.  Smoosh down with your hand to make flat and thin. Using the mandoline potatoes and onions, very thin.  Cut zucchini and carrots slightly thicker.  Place on top of beef patties.  Sprinkle with soup mix and add a squirt of ketchup. I also add a little salt and pepper.  Fold up tightly.  Grill, flipping once, for 30-40 minutes or cook in your oven about an hour.

Once again, my picture is less than stellar.  This just isn’t pretty to look at, but it tastes great!
